For this pancake I used a combination of soy flour and protein powder. Surprisingly enough, I got the fluffiest and softest pancake in the world! No soy flour aftertaste and extremely light. It’s rare how something so pampering can be part of an athlete’s diet.
1 cup soy flour
1.5 scoops chocolate-flavored protein powder
1.5 cup non-sweeten soy milk
4 cups apple sauce
1 teaspoon (non-aluminum) baking powder
1 teaspoon apple vinegar
on top: strawberries, date honey (don’t overuse), almond butter and whatever you like.
What to do
+Put all the ingredients in the blender and blend until you get a smooth batter. The batter should be relatively thick and not thin.
+Preheat a nonstick pan and pour the batter with a spoon, wait until it gets a gold color and then flip to the other side.
+Repeat with the remaining batter.
+Decorate with your favorite toppings and serve.
